Ayam Geprek (Indonesian Smashed Fried Chicken)
Ingredients:
- 500g chicken breast fillets
- Crispy seasoning flour
- For the Sambal:
- 7 red bird’s eye chilies
- 10 curly red chilies
- 5 cloves garlic
- Salt, to taste
- Mushroom broth powder, to taste

Begin by preparing the chicken. Mix a small amount of crispy seasoning flour with water in a bowl to create a marinade paste for the chicken. Make it slightly thick. Let it sit in the freezer for 10 minutes.

Remove the chicken from the marinade paste. Coat each piece evenly with the dry crispy seasoning flour. Fry until golden brown.

For the sambal, grind together all the ingredients until smooth. Heat some oil in a pan or wok.

Transfer the fried chicken into a mortar (cobek) with the sambal. Smash and mix them together thoroughly.

Serve the Ayam Geprek hot with steamed rice or as desired.
