Ayam Koloke Recipe
Ingredients:
- 250 grams chicken fillet, cut into pieces
- 2 tablespoons all-purpose seasoning flour (dissolved in 75 ml water)
- Coating:
- 4 tablespoons all-purpose flour
- 1 tablespoon cornstarch
Sauce Ingredients:
- 1 tablespoon butter or margarine
- 2 cloves garlic, finely chopped
- 1 small shallot, thinly sliced
- 1/2 carrot, julienned
- 1/2 cucumber, deseeded and julienned
- 1 stalk spring onion, chopped
- 2 red chilies, diagonally sliced
- 3 bird’s eye chilies, diagonally sliced
- 3 tablespoons tomato sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon lemon juice or lime juice
- 250 ml water
- Salt, pepper, sugar to taste
- 1 teaspoon cornstarch (dissolved in 1 tablespoon water)
Instructions:

Marinate the Chicken: Coat the chicken pieces with the dissolved all-purpose seasoning flour mixture. Mix well and set aside.

Prepare the Coating: In a separate bowl, combine the all-purpose flour and cornstarch. Coat each marinated chicken piece evenly with this mixture.

Frying the Chicken: Heat oil in a pan over medium-high heat. Fry the coated chicken pieces until golden brown and cooked through. Remove and drain on paper towels.
