Ayam Koloke Recipe

Ingredients:

  • 250 grams chicken fillet, cut into pieces
  • 2 tablespoons all-purpose seasoning flour (dissolved in 75 ml water)
  • Coating:
    • 4 tablespoons all-purpose flour
    • 1 tablespoon cornstarch

Sauce Ingredients:

  • 1 tablespoon butter or margarine
  • 2 cloves garlic, finely chopped
  • 1 small shallot, thinly sliced
  • 1/2 carrot, julienned
  • 1/2 cucumber, deseeded and julienned
  • 1 stalk spring onion, chopped
  • 2 red chilies, diagonally sliced
  • 3 bird’s eye chilies, diagonally sliced
  • 3 tablespoons tomato sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon lemon juice or lime juice
  • 250 ml water
  • Salt, pepper, sugar to taste
  • 1 teaspoon cornstarch (dissolved in 1 tablespoon water)

Instructions:

  1. Marinate the Chicken: Coat the chicken pieces with the dissolved all-purpose seasoning flour mixture. Mix well and set aside.

  2. Prepare the Coating: In a separate bowl, combine the all-purpose flour and cornstarch. Coat each marinated chicken piece evenly with this mixture.

  3. Frying the Chicken: Heat oil in a pan over medium-high heat. Fry the coated chicken pieces until golden brown and cooked through. Remove and drain on paper towels.

  4. Prepare the Sauce: In the same pan, melt the butter. SautΓ© the garlic and shallot until fragrant. Add the carrot and cucumber, then pour in the water. Bring to a boil.

  5. Add Seasonings: Stir in the red chilies, bird’s eye chilies, tomato sauce, oyster sauce, sesame oil, salt, pepper, sugar, and lemon juice. Mix well.

  6. Thicken the Sauce: Pour in the dissolved cornstarch mixture, stirring constantly until the sauce thickens. Add the chopped spring onions and mix briefly.

  7. Combine Chicken and Sauce: Add the fried chicken pieces to the sauce, tossing gently until each piece is coated evenly.

  8. Serve: Transfer the Ayam Koloke to a serving dish and garnish with additional spring onions or sliced chilies if desired. Serve hot with steamed rice.
