Ingredients
For the Chicken Marinade
- 1 kg chicken, cut into 8 pieces
- 1 egg
For the Spice Paste
- 1 teaspoon coriander seeds
- 1 packet chicken bouillon
- 1 thumb-sized piece of turmeric
- 1/2 teaspoon salt
For the Flour Mixture
- 500 grams all-purpose flour (Cakra brand preferred)
- 150 grams cornstarch
- 1 packet ground pepper
- 1 packet chicken bouillon
For the Dipping Batter
- 250 ml water
- 5 tablespoons of the flour mixture (prepared above)
- 1 teaspoon baking soda

Marinate the Chicken: Blend the spice paste ingredients until smooth. Coat the chicken pieces thoroughly with this paste. Place the marinated chicken in the refrigerator and let it marinate overnight to allow the flavors to penetrate deeply.

Prepare the Dipping Batter: In a separate bowl, combine all the dipping batter ingredients. Mix well and store this batter in the refrigerator until ready to use.

Dip and Re-Coat the Chicken: Dip each flour-coated piece of chicken into the prepared dipping batter, ensuring it is fully submerged. Immediately roll the dipped chicken back into the flour mixture, pressing the flour onto the chicken again to create a crispy outer layer.

Fry the Chicken: Heat a large amount of oil in a deep fryer or a heavy-bottomed pot over medium heat. Once the oil is hot (about 350°F or 175°C), carefully place the coated chicken pieces into the oil. Fry the chicken until golden brown and crispy, turning occasionally to ensure even cooking. This should take about 12-15 minutes per batch, depending on the size of the chicken pieces.
