Crispy Fried Chicken Indonesian Style (Ayam Goreng Tepung)

Ingredients:

  • 1 kg chicken thighs, drumsticks, or your preferred chicken parts
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1 tbsp ground black pepper
  • Garlic powder, to taste
  • Chicken seasoning powder, to taste
  • Water, as needed
  • Cooking oil, for frying

Instructions:

  1. Prepare the Chicken:
    Start by preparing the chicken pieces. Rinse and pat them dry with paper towels.

  2. Marinate the Chicken:
    In a bowl, mix together ground black pepper, garlic powder, and chicken seasoning powder. Rub this mixture all over the chicken pieces, ensuring they are evenly coated. Let the chicken marinate for at least 30 minutes. You can marinate it longer if desired, up to several hours for more flavor.

  3. Prepare the Coating Station:

    • In three separate bowls, set up your coating station:
      • Bowl 1: Place the all-purpose flour.
      • Bowl 2: Beat the egg until well combined.
      • Bowl 3: Prepare a mixture of water and a bit more flour to create a thin batter consistency.
  4. Coat the Chicken:

    • Heat the cooking oil in a frying pan or deep fryer over medium heat.
    • Dip each marinated chicken piece first into the beaten egg, ensuring it’s fully coated.
    • Then dip it into the flour, ensuring an even coating. Shake off any excess flour.
    • Next, dip the floured chicken into the thin batter mixture, coating it lightly.
    • Finally, dip it back into the flour for a second coating. Gently press the flour onto the chicken to ensure it sticks well.
  5. Fry the Chicken:

    • Carefully place the coated chicken into the hot oil. Fry in batches to avoid overcrowding the pan.
    • Fry each side for about 5-7 minutes or until golden brown and crispy. Adjust the heat if necessary to maintain a steady frying temperature.
    • Once cooked through and crispy, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.
  6. Serve:
