Crispy Indonesian Fried Chicken (Ayam Goreng Tepung)

Ingredients:

  • 300 grams chicken, cut into pieces
  • Marinade:
    • 2 shallots
    • 3 cloves garlic
    • 1 leaf kaffir lime, thinly sliced
    • 1 thumb-sized piece of ginger
    • 1 thumb-sized piece of turmeric
    • 1 piece galangal
    • Salt, sugar, and pepper to taste
  • Coating:
    • 1 egg, beaten
    • All-purpose flour
    • All-purpose flour + cornstarch (5:1 ratio)
    • Salt and mushroom bouillon powder mixed into the flour-cornstarch mixture

Steps:

  1. Prepare the Marinade:

    • Grind together shallots, garlic, kaffir lime leaf, ginger, turmeric, and galangal with salt, sugar, and pepper until smooth.
  2. Marinate the Chicken:

    • Massage the chicken pieces with the marinade mixture and let it marinate for at least 1 hour.
  3. Coat the Chicken:

    • Coat each marinated chicken piece first with plain all-purpose flour.
  4. Dip and Coat Again:

    • Dip each floured chicken piece into the beaten egg, ensuring it’s well coated.
  5. Final Coating:

    • Roll the chicken in the flour-cornstarch mixture until evenly coated.
  6. Fry the Chicken:

    • Heat oil over medium heat. Fry the chicken until golden brown, ensuring the oil temperature is moderate to prevent burning. Adjust the heat if needed for even cooking and to maintain the chicken’s attractive color and juicy interior.
  7. Serve:

    • Serve the crispy Indonesian fried chicken hot with chili sauce or as it is, letting the flavors of the marinade, especially the aromatic kaffir lime leaf, shine through.
