Chicken Katsu Recipe

Ingredients:

  • 250 grams chicken breast, thinly sliced
  • Seasoned flour, as needed
  • Panko breadcrumbs, as needed

Sauce:

  • 1 clove garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon margarine
  • 3 tablespoons tomato sauce
  • 2 tablespoons chili sauce
  • 1 teaspoon oyster sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 50 ml water
  • Sugar and ground pepper, to taste

Steps:

  1. Prepare the Chicken:

    • Mix a small amount of seasoned flour with water until it forms a thin batter. Set aside.
    • Coat each chicken slice with seasoned flour, then dip into the batter mixture, and finally coat evenly with panko breadcrumbs. Repeat for all chicken slices.
    • Place the breaded chicken in the freezer for 30 minutes to firm up (can be kept overnight for convenience).
  2. Frying the Chicken:

    • Heat oil in a pan over medium heat. Fry the breaded chicken until golden brown and cooked through. Drain on paper towels to remove excess oil.
  3. Prepare the Sauce:

    • In a separate pan, sauté minced garlic in margarine until fragrant.
    • Add tomato sauce, chili sauce, oyster sauce, sweet soy sauce, sugar, ground pepper, sesame oil, and water. Cook until the sauce thickens and flavors meld. Set aside.
  4. Assembly:

    • To serve, arrange a portion of rice in a bowl. Place the fried chicken on top and generously pour the sauce over the chicken.
