Waroeng Steak Jogja-Style: A Delicious Homemade Twist
Ingredients:
-
For the Steak:
- 1/4 kg beef tenderloin (sliced into 4 portions and flattened)
- 2 packs all-purpose flour (I used Saji brand)
- 1 teaspoon cornstarch
- 1 teaspoon ground black pepper
- 1 egg
- Marinade: oyster sauce, salt, and pepper to taste
-
For the Sauce:
- 1 onion
- 8 shallots
- 4 cloves garlic
- 1/2 teaspoon cornstarch mixed with 3 tablespoons water
- Tomato sauce
- Oyster sauce
- 1 ripe tomato (blanched and peeled, seeds removed)
- 1 tablespoon granulated sugar
- 1 beef bouillon cube
Instructions:
-
Marinate the Beef:
- Begin by marinating the beef slices with oyster sauce, salt, and black pepper. Allow the meat to marinate for about 10 minutes in the refrigerator.
-
Prepare the Breading Station:
- Set up two separate bowls: one with a mixture of all-purpose flour and cornstarch, and another with beaten egg.
- Dip each marinated beef slice into the egg mixture, then dredge thoroughly in the flour mixture, pressing gently to ensure the coating sticks well.
-
Fry the Beef:
- Heat some oil in a pan over medium heat. Fry the coated beef slices until they are golden brown and crispy. Set aside.
-
Make the Sauce:
- In a separate pan, heat a bit of oil and sauté finely chopped onions, shallots, and garlic until fragrant.
- Add tomato sauce, oyster sauce, and sugar. Stir well to combine.
- Incorporate the peeled tomato and add enough water to reach your desired sauce consistency.
- Add the beef bouillon cube and simmer until the sauce thickens slightly.
- Mix the cornstarch slurry into the sauce, stirring constantly until the sauce has a glossy texture. Season with salt and pepper to taste.
-
Serve:
- Pour the prepared sauce over the crispy beef slices.
- Garnish with your choice of vegetables and serve immediately.
Enjoy your homemade Jogja-style steak with this savory and delicious sauce, perfect for a hearty meal any day of the week!
