Instructions
-
Prepare the Dough: In a large bowl, combine the millet flour and wheat flour. Add salt, kalonji seeds, green chilli paste, garlic paste, and butter. Mix with your hands until the mixture resembles coarse breadcrumbs.
-
Add Dairy and Knead: Stir in the curd and mix thoroughly. Gradually add water to knead the dough. Knead for about 5 minutes until the dough is smooth and not sticky. Incorporate 1 teaspoon of oil into the dough for added elasticity.
-
Mold the Murukku: Grease the murukku mold and chakri from the inside with a little oil. Fill the mold with the prepared dough. On a piece of plastic wrap, shape the dough into small murukku (chakri) by pressing the inner and outer edges firmly.
-
Heat the Oil: In a deep pan, heat sufficient oil over medium heat. Allow the oil to reach the right temperature.
-
Fry the Murukku: Using a ladle, carefully drop the murukku into the hot oil, frying them in batches of two. Fry until they turn golden brown and crispy, which usually takes about 5-7 minutes.
-
Drain and Serve: Once cooked, remove the murukku from the oil and drain on paper towels. Serve warm as a delightful snack, perfect for any occasion!
Enjoy the crispy and flavorful Kambu Murukku, a delightful twist on traditional South Indian snacks thatโs sure to impress!
