This Karela Dahi Puri recipe is an innovative twist on the traditional chaat. Instead of deep-fried tikkis, we use the uniquely bitter karela (bitter gourd) to create a savory and tangy snack. Ideal for those who aren’t fond of the bitterness of karela, this recipe is sure to surprise your taste buds with its delicious combination of flavors.

Cuisine: Indian

  • 2 teaspoons Coriander Powder (Dhania)
  • 1 teaspoon Red Chilli Powder (adjust to taste)
  • 1 pinch Asafoetida (Hing)
  • 1/4 cup Gram Flour (Besan)
  • 1 teaspoon Black Salt (Kala Namak) (adjust to taste)
  • Oil, as needed for shallow frying

For Assembling Karela Dahi Puri:

  • 1/4 cup Hung Curd (Greek Yogurt)
  • 1 teaspoon Chaat Masala Powder
  • 1 tablespoon Sweet Chutney (Date & Tamarind)
  • 1/2 cup Sev
  • 1/4 cup Aloo Bhujia (optional)
  • Dates, few, chopped
  • Coriander Leaves (Dhania), small bunch, finely chopped

Prep Time: 15 minutes

Cook Time: 10 minutes

Instructions:

  1. Boil the Bitter Gourd: Begin by heating about 2 cups of water in a saucepan. Add the sliced karela to the water and boil for 2 minutes or until semi-cooked. Strain the bitter gourd slices and set aside.

  2. Prepare the Coating: In a mixing bowl, combine gram flour, red chilli powder, black salt, coriander powder, and asafoetida. Add the karela slices to this mixture, and sprinkle some water if needed to ensure the bitter gourd is well coated with the spice mix.

  3. Fry the Bitter Gourd: Heat oil in a pan for shallow frying. Fry the spiced bitter gourd in batches, until they become crispy and golden brown. Set aside on a paper towel to drain excess oil.

  4. Prepare the Yogurt Mixture: In a bowl, whisk the hung curd with chaat masala powder until smooth. Set aside.

  5. Assemble the Dahi Puri: On a serving plate, arrange the crispy karela slices. Drizzle the spiced yogurt mixture and tamarind chutney over each slice. Top with sev, aloo bhujia (if using), chopped dates, and garnish with finely chopped coriander leaves.

  6. Serve: Serve your Karela Dahi Puri immediately with a hot cup of Masala Tea or Filter Coffee for a perfect evening snack!

Enjoy this innovative Karela Dahi Puri, which transforms the bitterness of karela into a delightful chaat experience. Perfect for those who love tangy, spicy, and crispy snacks!
