  • 1/2 teaspoon Red Chilli Powder
  • 1 pinch Asafoetida (Hing)
  • Salt, to taste

Instructions

  1. Prepare the Karela:

    • Wash the bitter gourd thoroughly. Lightly peel off the outer skin (optional) and slice it into medium-thick roundels.
  2. Make the Bajji Batter:

    • In a mixing bowl, combine gram flour, turmeric powder, ajwain, garlic, red chilli powder, asafoetida, and salt.
    • Gradually add water to the dry ingredients and whisk to form a smooth, thick batter. The consistency should be thick enough to coat the back of a spoon.
  3. Fry the Karela Bajji:

    • Heat oil in a deep, heavy-bottomed pan or kadai over medium heat.
    • Dip each karela slice into the prepared batter, ensuring it is well-coated, and carefully place it into the hot oil.
    • Fry the bajjis in small batches until golden brown and crispy.
    • Remove the fried bajjis and place them on a plate lined with absorbent paper to remove excess oil.
  4. Serve:

    • Serve the Karela Bajji hot with Green Chutney and a cup of Masala Chai for a perfect evening snack.
