Crispy Krauk Chicken Recipe

Ingredients:

For the Chicken Marinade:

  • 1/4 kg chicken breast
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice

For the Flour Coating:

  • 6 small packs of all-purpose flour
  • 4 tablespoons all-purpose flour (medium protein)
  • 1/2 cup ice-cold water

For the Sauce:

  • 1/2 onion, chopped
  • 1 red chili, chopped
  • 2 tablespoons ketchup
  • 2 tablespoons chili sauce
  • 2 tablespoons teriyaki sauce
  • 2 tablespoons sweet soy sauce
  • 100 ml water
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice

For Frying and Garnishing:

  • Oil for frying and sautΓ©ing
  • Sesame seeds for garnish

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken breasts and separate the meat from the bones. Cut the chicken into bite-sized cubes.
    • Marinate the chicken with black pepper, salt, nutmeg, ground coriander, garlic powder, and lemon juice. Allow it to marinate in the refrigerator for at least 30 minutes. For a more intense flavor, marinate overnight.
  2. Prepare the Flour Coating:

    • Combine the all-purpose flour and medium-protein flour in a bowl.
    • Dredge each piece of marinated chicken in the flour mixture, then dip it into ice-cold water. Shake off any excess water.
    • Return the chicken to the flour mixture and coat it again, pressing gently to ensure the flour sticks. Repeat this process twice for an extra crispy texture.
  3. Fry the Chicken:

    • Heat oil in a frying pan over medium heat.
    • Fry the chicken pieces in batches until they are golden brown and crispy. Remove the fried chicken and drain on paper towels.
  4. Prepare the Sauce:

    • In a separate pan, heat some oil and sautΓ© the chopped onion until it becomes fragrant.
    • Add the chopped red chili, water, ketchup, chili sauce, teriyaki sauce, and sweet soy sauce. Stir well to combine.
    • Season with black pepper and salt. Simmer for a few minutes until the sauce thickens slightly.
    • Add the lemon juice and stir well.
  5. Combine and Serve:

    • Add the fried chicken pieces to the sauce, stirring to coat them evenly.
    • Remove from heat and transfer to a serving dish.
    • Garnish with sesame seeds before serving.
