Elevate your weeknight dinners with this delectable Crispy Lemon Chicken, featuring a perfect blend of crispy, tender chicken coated in a zesty lemon sauce. This Indonesian-inspired recipe combines savory chicken pieces with a tangy lemon sauce, making it an irresistible addition to your culinary repertoire. Here’s how to make it:

Ingredients

For the Chicken Marinade:

  • 250 grams chicken breast, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon coriander powder, ground
  • 1 sachet (25 grams) mayonnaise or 2 tablespoons mayonnaise
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tapioca flour
  • 1 tablespoon rice flour
  • 1/4 teaspoon chicken bouillon powder
  • Oregano to taste
  • Salt and pepper to taste
  • Enough water to combine

For the Lemon Sauce:

  • 1 medium onion, chopped
  • 1 sachet Bamboe Lemon Sauce
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon ground black pepper
  • Toasted sesame seeds, for garnish

Instructions

  1. Prepare the Marinade:

    • In a bowl, combine the minced garlic and coriander powder. Add the mayonnaise and mix well.
    • In a separate bowl, whisk together the all-purpose flour, tapioca flour, and rice flour. Add the chicken bouillon powder, oregano, and salt and pepper to taste.
    • Pour the mayonnaise mixture into the flour mixture and stir to combine. Gradually add water until you achieve a batter-like consistency.
    • Add the diced chicken to the mixture, ensuring that each piece is well-coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for deeper flavor.
  2. Fry the Chicken:

    • Heat oil in a frying pan over medium heat. Once hot, add the marinated chicken pieces and fry until golden brown and crispy, about 4-5 minutes per side. Remove from the oil and drain on paper towels.
  3. Prepare the Lemon Sauce:

    • In a separate pan, heat a little oil and sauté the chopped onion until it becomes soft and fragrant.
    • Pour in the Bamboe Lemon Sauce, and add the granulated sugar and ground black pepper. Stir well to combine.
  4. Combine and Serve:

    • Add the fried chicken pieces to the lemon sauce. Toss to coat the chicken evenly with the sauce.
    • Transfer the coated chicken to a serving plate, sprinkle with toasted sesame seeds, and serve immediately.

This Crispy Lemon Chicken is sure to become a favorite with its crunchy exterior and tangy sauce. Enjoy it as a main course with steamed rice or a side of vegetables for a complete meal.
