Crispy Chicken Skin Chips by Bubu

Ingredients:

  • Chicken skin
  • Water for boiling
  • Lemongrass
  • Chicken bouillon powder
  • Ground coriander
  • Turmeric
  • Black pepper
  • Garlic
  • Lime juice
  • Salt
  • Oil for frying (chicken skin fat can be used for extra flavor)

Instructions:

  1. Begin by thoroughly cleaning the chicken skin, removing any residual feathers, internal membranes, and excess fat. Rinse the skin under cold running water until it is completely clean.

  2. Squeeze lime juice over the chicken skin and sprinkle with salt. Let it marinate for a few minutes to infuse the flavors. Rinse the skin again to remove excess salt and lime juice.

  3. Prepare the spice mixture by finely grinding lemongrass, ground coriander, garlic, and turmeric until smooth. Add this spice paste to a pot of water and bring to a boil.

  4. Once boiling, add salt, chicken bouillon powder, and black pepper to the pot. Stir to combine and ensure the seasoning is well distributed.

  5. Gently place the cleaned chicken skin into the pot of boiling spice mixture. Cook the chicken skin in the seasoned water until it is fully infused with the flavors.

  6. Remove the chicken skin from the pot and drain well. Let it cool and dry completely.

  7. Heat oil in a deep fryer or heavy pan to a temperature suitable for frying (around 350°F/175°C). Carefully fry the chicken skin pieces in batches until they are golden brown and crispy.

  8. Use a slotted spoon to remove the chicken skin chips from the oil and drain on paper towels to remove excess oil.
