- Chicken skin
- Water for boiling
- Lemongrass
- Chicken bouillon powder
- Ground coriander
- Turmeric
- Black pepper
- Garlic
- Lime juice
- Salt
- Oil for frying (chicken skin fat can be used for extra flavor)
Instructions:
-
Begin by thoroughly cleaning the chicken skin, removing any residual feathers, internal membranes, and excess fat. Rinse the skin under cold running water until it is completely clean.
-
Squeeze lime juice over the chicken skin and sprinkle with salt. Let it marinate for a few minutes to infuse the flavors. Rinse the skin again to remove excess salt and lime juice.
-
Prepare the spice mixture by finely grinding lemongrass, ground coriander, garlic, and turmeric until smooth. Add this spice paste to a pot of water and bring to a boil.
-
Once boiling, add salt, chicken bouillon powder, and black pepper to the pot. Stir to combine and ensure the seasoning is well distributed.
-
Gently place the cleaned chicken skin into the pot of boiling spice mixture. Cook the chicken skin in the seasoned water until it is fully infused with the flavors.
-
Remove the chicken skin from the pot and drain well. Let it cool and dry completely.
-
Heat oil in a deep fryer or heavy pan to a temperature suitable for frying (around 350°F/175°C). Carefully fry the chicken skin pieces in batches until they are golden brown and crispy.
-
Use a slotted spoon to remove the chicken skin chips from the oil and drain on paper towels to remove excess oil.
-
Allow the crispy chicken skin chips to cool completely before serving. Enjoy as a crunchy and flavorful snack or appetizer.
