Crispy Ayam Geprek with Makban Shrimp Paste
Ingredients:
- 250 grams chicken breast fillet
- All-purpose flour, as needed
- Sambal Sauce:
- 1 clove garlic
- 1 large red chili
- Bird’s eye chilies, to taste
- A pinch of chicken bouillon powder
- 1/2 tsp Makban Shrimp Paste

Prepare the chicken: Cut the chicken breast into fillets, then coat them evenly in a mixture of flour and the sambal ingredients. Repeat this coating process 2-3 times.

Heat oil in a frying pan over medium heat. Fry the chicken fillets until they turn golden brown and crispy. Drain excess oil on paper towels.

Make the sambal sauce: Using a mortar and pestle, grind together garlic, red chili, bird’s eye chilies, chicken bouillon powder, and Makban Shrimp Paste until you get a coarse paste.

Geprek (smash) the fried chicken fillets using a pestle or the back of a knife, then generously spread the sambal sauce over the chicken.
