Sambar powder 1 tablespoon
Red Chilli powder 1 tablespoon
Salt to taste
Turmeric powder (Haldi) 1 pinch
Sugar 3 tablespoons
Sooji (Semolina/Rava) 1/2 cup
Curry leaves (finely chopped) 2 sprigs
Oil for deep frying as needed

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, combine whole wheat flour, baking powder, and salt. Mix these dry ingredients well.
    • Add the hot oil to the mixture, followed by a little water at a time, and knead the dough until it reaches a firm yet smooth consistency. The hot oil in the dough is what makes these rotis extra crispy when fried.
    • Once the dough is ready, cover the bowl with a clean kitchen towel and set it aside to rest while you prepare the filling.
  2. Prepare the Filling:

    • Heat a pan on medium heat and add 3 tablespoons of oil. Once the oil is hot, add mustard seeds and curry leaves. Let them splutter to release their flavors.
    • Add the urad dal to the pan and sauté until it turns a light golden brown color.
    • Next, add the cumin powder, coriander powder, sambar powder, red chili powder, turmeric powder, and salt to the pan. Stir these spice powders together and sauté for 1–2 minutes.
    • Add sugar and semolina (sooji) to the mixture and continue to sauté on low heat for another 3–4 minutes, allowing the spices and semolina to blend well. Turn off the heat and set the mixture aside to cool.
  3. Assemble the Biscuit Roti:

    • Once the dough has rested, divide it into small equal portions, and roll each portion into a ball.
    • Using a rolling pin, flatten each dough ball into a small circle.
    • Place a generous amount of the prepared filling in the center of each flattened dough circle.
    • Carefully fold the edges of the dough over the filling, pinching them together to seal the filling inside.
    • Roll the stuffed dough ball gently to form a small disc-shaped roti.
  4. Fry the Biscuit Roti:

    • Heat oil in a deep frying pan over medium heat. The oil should be enough to fully immerse the biscuit roti.
    • Once the oil is hot, gently slide the prepared roti into the oil. Fry the roti until golden brown and crispy on both sides. Be sure to fry them in batches to avoid overcrowding the pan.
    • Once fried, remove the roti from the oil and place it on a paper towel to absorb any excess oil.
  5. Serve:
