Preparing the Salmon:
Begin by cleaning the salmon fillet. If you purchased a whole salmon, first remove the internal organs and fillet it. Use kitchen tweezers to carefully remove any bones. Then, gently peel the skin away from the fillet with a sharp knife, starting from the tail. Once cleaned, you should have approximately 800 g of salmon fillet. -
Making the Marinade:
In a ceramic or glass baking dish, pour in the extra virgin olive oil. Add the zest and juice of the lemon, pink peppercorns, black peppercorns, fine salt, dill, thyme, bay leaf, fennel seeds, and anise seeds. Place the fillet of salmon into the dish and gently massage the marinade into the fish to allow the flavors to penetrate. Cover the dish with plastic wrap and refrigerate the salmon to marinate for 24 hours. -
Preparing the Crust:
While the salmon marinates, prepare the breading by combining the bread crumbs and almond flour in a bowl. Add the sweet paprika, parsley, salt, and black pepper, and mix well. The mixture should be slightly moist, so if needed, add a little more olive oil from the marinade. -
Baking the Salmon:
After marinating, remove the salmon from the fridge about an hour before cooking to bring it to room temperature. Place the salmon on a cutting board and cut it into four portions. Lightly salt each piece. -
Assembling the Dish:
Strain the marinade oil using a fine sieve, and add the filtered oil to the breadcrumb mixture. Stir well to make the breading moist. Coat the entire surface of each salmon fillet with the prepared breading. -
Cooking the Salmon:
Preheat the oven to 180°C (350°F) in static mode (or 160°C/320°F in fan mode). Place the salmon fillets in the oven and bake for 10 minutes. Then, switch the oven to grill mode and increase the temperature to 230°C (450°F) for an additional 5 minutes to allow the breading to become golden and crispy. -
Serving:
Once the salmon has a crispy, golden crust, remove it from the oven and let it rest for a few minutes before serving. The salmon is now ready to be served and enjoyed with your favorite sides.
