Chat Masala Powder 1/2 teaspoon

Boiled Potatoes 2 cups (mashed)
Onion 1 cup (finely sliced)
Ginger 1 teaspoon (grated)
Green Chilies 2 (finely chopped)

Curry Leaves 6 leaves (finely chopped)
Fresh Coriander A handful (finely chopped)
Salt To taste

Instructions:

Step 1: Preparing the Aloo Masala (Potato Filling)

  1. Heat oil in a kadhai (pan) on medium heat.
  2. Add mustard seeds, urad dal, and chana dal to the hot oil and sauté until lightly browned.
  3. Once browned, add grated ginger, sliced onions, curry leaves, and green chilies. Sauté until the onions soften and become translucent.
  4. Stir in turmeric powder and salt.
  5. Add the mashed potatoes and mix well, ensuring that the potatoes blend thoroughly with the spices.
  6. Cover the pan, reduce the heat, and let the mixture cook for 3-4 minutes.
  7. Once done, remove from heat and set aside.

Step 2: Making the Dosa

  1. Heat a griddle (tava) on medium-high heat.
  2. Pour a ladle of dosa batter onto the hot griddle and, using the back of the ladle, spread it into a thin, circular shape.
  3. Drizzle a little oil around the edges of the dosa and let it cook for a few seconds until it becomes crispy and golden brown.
  4. Spread a little garlic chutney on the dosa, then spoon a generous amount of aloo masala over the top.
  5. Once the dosa is cooked and crispy, fold it carefully and serve immediately.
