Telur Daun So (Melinjo Leaf Omelette)

Ingredients

  • 2 large eggs
  • 1 handful of melinjo leaves (daun melinjo), washed and coarsely chopped
  • Salt to taste
  • Optional: a pinch of chicken or vegetable bouillon powder
  • Oil for frying

Instructions

  1. Prepare the Egg Mixture: Crack the eggs into a bowl and whisk them thoroughly. Season with salt to taste, and if desired, add a pinch of chicken or vegetable bouillon powder to enhance the flavor.

  2. Add the Melinjo Leaves: Incorporate the washed and coarsely chopped melinjo leaves into the egg mixture, stirring gently to ensure the leaves are evenly distributed.

  3. Cook the Omelette: Heat a small amount of oil in a frying pan over medium heat. Pour in the egg and leaf mixture. Allow it to cook until the edges begin to set, then you can either fold the omelette into a roll or let it cook flat like a traditional omelette. Cook until the omelette is golden brown and fully set.
