Mini Supplì with Ham and Scamorza

Ingredients

Risotto alla parmigiana (cold) 500g
Scamorza (or provola) 200g
Cooked ham 200g
All-purpose flour 100g
Bread crumbs (pangrattato) 250g
Water 150g
Fine salt to taste
Peanut oil (for frying) to taste

Instructions

  1. Prepare the Risotto:
    Start by making the Risotto alla parmigiana in advance. Allow it to cool completely. If you don’t have pre-made risotto, you can follow the recipe available on our site. You’ll need 500g of this risotto to form the mini supplì.

  2. Prepare the Ham and Scamorza:
    Cut the cooked ham into small cubes, about 1cm in size. Then, slice the scamorza (or provola) cheese into cubes of similar size.

  3. Make the Batter:
    In a bowl, sift the all-purpose flour and mix in a pinch of salt. Gradually add cold water while stirring continuously to form a smooth batter without lumps.

  4. Heat the Oil:
    Pour peanut oil into a pan for deep frying and bring it to temperature over medium heat. The oil should be enough to submerge the mini supplì during frying.

  5. Form the Mini Supplì:
    Take about 50g of the cooled risotto and shape it into a ball. Make a small indentation in the center of each rice ball. Fill the cavity with a small amount of cubed ham and scamorza. Gently close the ball by rolling it in your hands to ensure the filling is sealed inside. Repeat until you have formed 10 small spheres.

  6. Dip and Coat:
    Dip each rice ball into the batter, ensuring it is fully coated, and then roll it in the breadcrumbs, pressing gently to coat evenly.

  7. Fry the Mini Supplì:
    Carefully place the breaded rice balls into the hot oil, frying them in batches to avoid overcrowding. Fry until golden brown and crispy on the outside, which should take about 3-4 minutes.

  8. Drain and Serve:
    Once the mini supplì are fried, remove them from the oil and let them drain on a paper towel to absorb any excess oil.

  9. Enjoy:
    Serve your mini supplì with ham and scamorza while they’re still hot and enjoy the delicious melty filling and crispy exterior!
