Narikol Pitha Recipe – Sweetened Coconut Fritter

Instructions:

  1. Prepare the Coconut Filling:
    Begin by heating a frying pan over medium heat. Add the grated fresh coconut and sugar to the pan. Roast the coconut and sugar mixture until it turns a light brown color, giving it a rich aroma. Once it’s done, turn off the heat and allow the mixture to cool down.

  2. Make the Dough:
    In a large mixing bowl, combine the all-purpose flour (Maida) with the roasted coconut and sugar mixture. Gradually add milk to the mixture, stirring as you go, until the dough comes together and forms a stiff consistency. The dough should be firm enough to hold its shape when shaped into small balls.

  3. Fry the Fritters:
    Heat sunflower oil in a wok or deep frying pan over medium heat. Carefully take small portions of the dough and roll them into balls, making sure they are uniform in size. Gently drop the dough balls into the hot oil, being cautious to not overcrowd the pan. Fry the balls until they turn golden brown and crisp on all sides, ensuring they are cooked through. This process will take about 3-4 minutes per batch.

  4. Drain and Serve:
    Once golden and crispy, use a slotted spoon to remove the Narikol Pitha from the oil. Place the fritters on a plate lined with oil-absorbent paper to remove any excess oil.

  5. Serve:
    Serve the freshly made Narikol Pitha hot, as a delightful dessert or as a savory evening snack. It pairs wonderfully with a cup of Masala Chai, enhancing the experience with its sweetness and aromatic flavor.


Additional Tips:

  • If you prefer a sweeter touch, feel free to increase the sugar according to your taste preferences.
  • For a richer texture, you can substitute the milk with coconut milk, which will add an additional coconut flavor to the fritters.
  • Be sure to fry the fritters at the right temperature to achieve the perfect crispiness. If the oil is too hot, they may burn, and if it’s too cool, the fritters may absorb too much oil and become greasy.
