- 1 whole Nile tilapia (cut into pieces)
- 2 cloves garlic
- 1/2 tablespoon turmeric powder (substitute with fresh turmeric if available)
- Coriander (to taste)
- Salt (to taste)
- 1 lime (for removing the fishy smell)
- Oil (for frying)

- 2 red shallots
- 2 cloves garlic
- Bird’s eye chilies (quantity according to your spice preference)
- 1 large red chili
- 1 tomato
- Terasi (shrimp paste) – 2 sachets (or to taste)
- Salt (to taste)
- Sugar (to taste)

- Fresh vegetables for accompaniment (lettuce, cucumber, and basil, or whatever is available)

Prepare the Marinade:
- In a mortar and pestle or food processor, blend the garlic, turmeric powder, coriander, and salt together.
- Mix this paste with the lime juice.
- Rub the marinade all over the fish pieces, ensuring each piece is well coated.
- Let the fish marinate for about 20 minutes.

Fry the Fish:
- Heat oil in a pan over medium heat. The oil should be hot before adding the fish to prevent sticking.
- Fry the fish until golden brown and crispy, turning once to ensure even cooking. For best results, let one side cook completely before flipping to the other side to avoid breaking the fish.
- Once the fish is cooked to your desired crispiness, remove it from the oil and drain on paper towels.

- In the same oil used for frying the fish, add the sliced red shallots and garlic. Sauté until fragrant.
- Add the shrimp paste (terasi) and stir until it becomes aromatic.

- Using a mortar and pestle or blender, grind the sambal mixture to a coarse paste. Adjust the taste with salt and sugar as needed.
