For Onion Pakora:

Gram flour (besan) 1 cup
Rice flour 1/4 cup
Onions, thinly sliced 3
Coriander (Dhania) leaves, finely chopped Small bunch
Green Chilli, finely chopped 3
Ajwain (Carom seeds) 1 teaspoon
Salt To taste
Enos Fruit Salt 1/2 teaspoon
Red Chilli powder 1/2 teaspoon
Turmeric powder (Haldi) 1/2 teaspoon
Oil For pan frying

For Green Chutney:

Ingredient Quantity
Coriander (Dhania) leaves, chopped 1 cup
Mint leaves (Pudina) 1 cup
Curry leaves 1/2 cup
Roasted peanuts (Moongphali) 1/2 cup
Ginger, finely chopped 1 inch
Green Chillies, chopped 2
Sugar 1 teaspoon
Lemon juice From 1 lemon
Salt To taste

Instructions

Step 1: Prepare the Green Chutney

To start with the Onion Pakora Roll, first prepare the green chutney. In a blender, combine coriander leaves, mint leaves, curry leaves, roasted peanuts, ginger, green chillies, sugar, lemon juice, and salt. Grind everything into a smooth paste, adding a little water as necessary. Set the chutney aside.

Step 2: Make the Onion Pakora Batter

Next, prepare the onion pakora. In a large mixing bowl, combine gram flour (besan), rice flour, thinly sliced onions, coriander leaves, green chillies, ajwain, turmeric powder, red chilli powder, enos fruit salt, and salt. Mix well to combine all the ingredients. Gradually add water to form a thick batter for the pakoras. Adjust salt and spice levels according to your taste.

Step 3: Cook the Onion Pakoras

For frying the pakoras, we will use a Kuzhi Paniyaram pan (or any similar pan with small cavities). Preheat the pan on medium heat, and add a few drops of oil into each cavity. Spoon the pakora batter into the cavities and cook on medium heat, flipping the pakoras occasionally, until they are golden brown and crispy on all sides. Once done, transfer the pakoras to a platter and set aside.

Step 4: Warm the Tortillas

Now, heat a little oil in a pan and lightly warm the tortillas on both sides. Once they are warm, transfer them to a flat surface to prepare for wrapping.

Step 5: Assemble the Onion Pakora Roll

To assemble the roll, spread a generous amount of Veeba Carrot Cucumber Sandwich Spread over the warmed tortilla. Add a few slices of fresh tomatoes, cucumber, and the crispy onion pakoras in the center of the tortilla. Sprinkle some chaat masala powder over the pakoras for an added zing. Drizzle the freshly prepared green chutney over the ingredients, then roll up the tortilla to form a wrap.
