Instructions:
- Start by ensuring that all ingredients are at room temperature to ensure smooth mixing.
- In a large mixing bowl, sift the flour, baking powder, and sugar together. Add a pinch of fine salt to the dry ingredients and mix well.
- Zest the orange and squeeze out the juice. Strain the juice through a fine mesh strainer to remove any pulp and seeds.
- Add the orange juice and zest to the dry ingredients, mixing everything together.
- Gradually add the egg yolks and softened butter to the mixture. Using your hands or a wooden spoon, begin to mix the dough until all ingredients are well combined and the dough comes together.
- Transfer the dough onto a lightly floured surface (or a worktop) and gently knead it for a minute until smooth.
- Divide the dough into small pieces, each weighing approximately 30g.
- Shape each piece into a ball with your hands. Using a whisk or your fingers, gently press down on the top of each ball to create a decorative imprint, resembling the sections of an orange.
- Preheat your oven to 180°C (350°F), ensuring it’s set to static heat for even baking.
- Place the biscotti on a baking sheet lined with parchment paper. Bake for approximately 25 minutes, or until the cookies are golden and firm to the touch.
- Once baked, remove the biscotti from the oven and allow them to cool completely on a wire rack before serving.
