Instructions

Step 1: Preparing the Kofta Mixture

To start, peel the avocado and mash it thoroughly using a fork until smooth and creamy. This will form the base of your kofta mixture. Set aside.

Step 2: Cooking the Carrot

In a skillet, heat 1 teaspoon of oil over medium-high heat. Add the grated carrot and sauté it for about 1 minute, just enough to soften it slightly, then remove it from the heat. Set it aside to cool.

Step 3: Mixing the Ingredients

In a mixing bowl, combine the mashed avocado, sautéed grated carrot, finely chopped onion, ginger, garlic, green chilies, and coriander leaves. In the same skillet, heat 2 tablespoons of sunflower oil over medium heat. Once the oil is hot, gently place the prepared koftas in the pan, leaving space between each one to avoid overcrowding. Let them fry for about 5 minutes, turning occasionally, until they are golden brown and crispy on all sides.

Once the koftas are perfectly crisp and golden, remove them from the skillet and place them on a plate lined with paper towels to drain any excess oil.
