Fry and Crush the Papad
Start by frying the papads in oil until they become crispy. Once fried, let them cool and then crush them into small pieces. Set aside. -
Prepare the Filling
In a separate bowl, combine the finely chopped onions, fresh coriander leaves, red chilli powder, garam masala, chaat masala, a pinch of salt, and 1 teaspoon of sunflower oil. Mix everything well to create the onion masala mixture. -
Combine the Masala and Papad
When you are ready to make the parathas, add the crushed papad to the prepared onion masala mixture. Stir everything together to ensure the papad is evenly coated with the spices and onions. -
Roll the Parathas
Take a small portion of the dough and roll it out into a medium-sized flat disc (similar to a roti). Place 1-2 tablespoons of the papad stuffing in the center of the rolled dough. -
Seal and Shape the Paratha
Carefully fold the edges of the rolled dough towards the center, sealing the papad filling inside. Pinch the edges together to form a ball with the stuffed dough. -
Flatten the Stuffed Ball
Gently roll out the stuffed dough ball into a flat paratha, ensuring the filling is evenly distributed. -
Cook the Paratha
Heat a tawa or pan on medium heat. Place the rolled paratha on the tawa and cook until golden brown spots begin to appear on one side. Flip the paratha and cook the other side. Smear with a little oil or ghee while cooking to enhance the flavor and texture. -
Repeat the Process
Continue the same process for the remaining dough and masala. Roll and cook all the parathas in the same manner. -
Serve
