To prepare these crispy fried carrot sticks, start by preparing the breadcrumb coating. Finely chop the rosemary and pluck the thyme leaves from their stems. Then, mix them together with the paprika to create a fragrant herb blend. Set this aside for later.
Next, prepare the carrots: peel them using a vegetable peeler or a smooth-edged knife. Cut off the ends, and then slice them into halves or quarters depending on their size. Once you’ve halved or quartered the carrots, cut them into uniform sticks about 1 cm thick.
Now, coat the carrot sticks in the herb and paprika mixture, ensuring theyβre evenly covered. Gently massage the breadcrumbs around the sticks to make sure they adhere well.
In a deep pot or frying pan, heat the peanut oil to 180Β°C (use a kitchen thermometer for accuracy). Once the oil is hot, carefully drop a handful of the carrot sticks into the oil.
