Begin by thoroughly washing the eggplant. Slice it into rounds about 1 cm thick. Arrange the slices on a baking tray lined with parchment paper. Drizzle generously with extra virgin olive oil, and season with sea salt and freshly ground black pepper. -
Roast the Eggplant:
Preheat the oven to 200°C (392°F) in a convection mode. Roast the eggplant slices for 20 minutes, allowing them to become tender and slightly golden. -
