Instructions

  1. Prepare the Eggplant:
    Begin by thoroughly washing the eggplant. Slice it into rounds about 1 cm thick. Arrange the slices on a baking tray lined with parchment paper. Drizzle generously with extra virgin olive oil, and season with sea salt and freshly ground black pepper.

  2. Roast the Eggplant:
    Preheat the oven to 200°C (392°F) in a convection mode. Roast the eggplant slices for 20 minutes, allowing them to become tender and slightly golden.

  3. Prepare the Breadcrumb Topping:
    While the eggplant is roasting, prepare the breadcrumb topping. Peel the garlic clove, removing the inner sprout, and finely chop or crush it into a bowl. Add the breadcrumbs to the bowl, along with sea salt, sweet paprika, and oregano. Finally, finely chop the fresh mint and mix it into the breadcrumb mixture.

  4. Grill the Eggplant:
    Once the eggplant has finished roasting, remove it from the oven. Sprinkle the breadcrumb mixture evenly over each slice of eggplant, pressing down gently to ensure it adheres well.

  5. Finish in the Oven:
    Increase the oven’s temperature to 240°C (464°F), and switch to grill mode. Place the eggplant back in the oven for 3 minutes or until the topping turns golden brown and crisp.

  6. Garnish and Serve:
    Remove the eggplant from the oven and finish with a sprinkle of fresh mint. Serve immediately while hot and crispy, perfect as a delicious side dish to accompany any meal!
