Instructions

  1. Prepare the Peas:
    Begin by preparing the spring onion. Trim off the green part, the root end, and the tougher outer layer. Slice the onion thinly. In a pan, heat a little olive oil and add the sliced spring onion. Add the whole garlic clove (peeled), and a pinch of salt. Cover the pan and cook for about 15-20 minutes. You may add a splash of water if the peas start to dry out. Once the peas are tender, remove the garlic and strain the peas, reserving the cooking liquid in a bowl.

  2. Puree the Peas:
    Take half of the cooked peas and place them in a food processor or blender. Blend until smooth to create a dense and homogeneous pea paste. Set this aside in a small bowl.

  3. Prepare the Batter:
    Finely chop the chives. In a large mixing bowl, whisk the egg until lightly beaten. Add the Greek yogurt and mix well. Gradually sift in the all-purpose flour and continue whisking to combine. Slowly pour in the milk, mixing continuously to form a smooth batter. Season with salt and pepper to taste. Fold in the whole peas and the pea puree. Add half of the chopped chives into the batter, and mix gently.

  4. Fry the Fritters:
    In a frying pan, heat the peanut oil over medium heat. You don’t need to deep fry the fritters, but they should be able to float freely in the oil. Using a tablespoon, drop spoonfuls of the batter into the hot oil, shaping them into small fritters. Fry for about 2 minutes on each side, turning them carefully with tongs to ensure they are golden brown and cooked through. For optimal frying, the oil should be around 180Β°C (350Β°F). A kitchen thermometer can help ensure the right temperature. Once done, remove the fritters using a slotted spoon and drain them on a paper towel-lined tray to remove excess oil.

  5. Prepare the Yogurt Sauce:
    While the fritters are frying, prepare the yogurt sauce. In a small bowl, combine the Greek yogurt with the milk. Stir until smooth, and season with salt and pepper to taste. Add the remaining chopped chives to the sauce and mix well.

  6. Serve:
    Serve the pea fritters hot, accompanied by the chilled yogurt sauce for dipping. Enjoy the warm, crispy fritters paired with the refreshing, tangy sauce.
