To create the Pecorino Fritto con Crema di Fave, start by preparing the creamy fava bean sauce.

Blanch the Fava Beans: Begin by blanching the fava beans in boiling salted water for a few minutes until tender. Drain and peel off the outer skins of the beans.

Prepare the Cream: Once the beans are peeled, place them in a blender or food processor. Add the olive oil, a squeeze of fresh lemon juice, salt, and freshly ground black pepper. Toss in the garlic clove, peeled and chopped, for added flavor.

Blend: Blend the mixture until smooth and creamy. If the cream appears too thick, gradually add a little water until you achieve the desired consistency. Once ready, transfer the cream into a jar or bowl and set aside.
