Instructions:

  1. Begin by preparing the orange zest: Use a peeler to carefully remove the zest of half an orange, avoiding the white pith beneath. Slice the zest into fine strips. Place them in a small bowl.

  2. In the same bowl, add 70ml of fresh lemon juice, 125ml of freshly squeezed orange juice, a tablespoon of honey, and a pinch of sea salt. Whisk the ingredients together using a fork until well combined, creating your orange-lemon vinaigrette.

  3. Now, take your persimmon (make sure it’s the non-astringent variety, like Fuyu, for the best texture and sweetness). After washing and drying it thoroughly, slice it into thin, even wedges.

  4. Next, prepare the fennel. Trim the tough ends and slice the fennel bulb into thin rings, making sure to remove any tough core pieces. If you prefer, you can also shave the fennel for an even more delicate texture.

  5. In a large mixing bowl, combine the fresh arugula, fennel slices, and persimmon wedges. Gently toss the ingredients to mix them.

  6. Drizzle the freshly prepared vinaigrette over the salad, ensuring all ingredients are evenly coated.

  7. Sprinkle the orange zest strips over the top of the salad and add a generous tablespoon of sesame seeds for added texture and flavor.

  8. Toss everything gently once more to combine. Taste and adjust with additional salt or pepper as needed.
