Fried Poha Chivda Recipe

Ingredients:
- 2 cups poha (flattened rice)
- ½ cup roasted peanuts
- ½ cup roasted chana dal (split chickpeas)
- ½ cup boondi (crispy chickpea flour balls)
- 2 tsp red chili powder
- 10 curry leaves
- Small pieces of dry coconut
- Salt, to taste

Cook Time: 20 minutes
Instructions:
- Heat oil in a wok or pan. Once the oil is hot, add the poha and fry until crispy. Remove the poha and place it on a paper towel to absorb excess oil.
- In the same pan, fry the peanuts until crispy, then add them to the poha.
- Next, fry the roasted chana dal in the same oil, and mix it into the poha.
- Add the curry leaves to the oil and fry them until crispy. Mix them into the poha as well.
- Add the red chili powder and salt to the mixture, then mix everything well.
- Let the chivda cool down before serving.
- Store in an airtight container, or serve immediately with masala tea or filter coffee as a perfect evening snack.
