Instructions

To create these delightful Anar & Aloo Pakoras, begin by thoroughly mashing the boiled potatoes in a mixing bowl. To this, add the vibrant pomegranate seeds, finely chopped green chili, cumin, salt, red chili powder, and chaat masala powder, ensuring all the ingredients are well-combined to create a flavorful filling.

Next, take small portions of this mixture and shape them into small balls, setting them aside as you prepare the batter. In a separate bowl, combine the gram flour (besan) with a pinch of salt, 2 teaspoons of oil, and a little water to create a thick, smooth batter that will coat the pakoras perfectly.

Now, take each potato-pomegranate ball and carefully dip it into the batter, ensuring it is fully coated. Heat oil in a deep frying pan over medium heat; once the oil is hot, gently place the battered balls into the pan, ensuring not to overcrowd the pan. Fry until the pakoras are golden brown and crispy on all sides, which should take about 4-5 minutes.

For a healthier alternative, consider using a paniyaram pan. Simply add one ball to each cavity and cook until golden and crispy.

Once cooked, remove the pakoras from the oil and place them on paper towels to absorb any excess oil. Serve the Anar & Aloo Pakoras hot, ideally alongside a fresh coriander-mint chutney and a cup of masala tea, making them the perfect treat for a rainy day or any festive gathering.
