Ingredients:

  • 3 potatoes
  • 1 cup milk
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup diced bacon
  • 1 onion, chopped

  • 1 1/2 cups shredded mozzarella cheese
  • 1 1/2 cups shredded cheddar cheese

Instructions:

Step Description
1 In a large saucepan or dutch oven, boil the potatoes until they are very tender.
2 Meanwhile, unroll the pizza crust onto an ungreased pizza pan or cookie sheet. Flatten the dough and build up the edges slightly. Prick the dough with the tines of a fork.
3 Pre-bake: Preheat your oven to 350°F (175°C). Place the prepared crust in the oven and pre-bake it for 15 minutes.
4 Drain the boiled potatoes and transfer them to a mixing bowl. Mash them with milk, garlic powder, and salt until smooth.
5 Spread the mashed potatoes evenly over the pre-baked crust.
6 In a skillet, partially cook the diced bacon. Add the chopped onion and diced red pepper. Cook until the vegetables are tender and the bacon is crisp. Drain well.
7 Assemble: Sprinkle the cooked bacon and vegetables over the mashed potatoes on the crust.
8 Top with shredded mozzarella and cheddar cheese.
9 Bake: Increase the oven temperature to 375°F (190°C). Bake the pizza for 20 minutes, or until the cheese is melted and bubbly.
