Potato Gatto Recipe

Description: You have to try this!! So different, yummy, and gives great presentation! I serve it with a crisp green salad and fresh veggies. 🥗🥔

Ingredients:

3 Potatoes
1 Onion
2 Garlic cloves
1 1/2 tbsp Butter
4 tbsp Parmigiano cheese
1 cup Half-and-half cream
1/3 cup Tiny peas
1/4 cup Mozzarella cheese
1 1/3 cups Salami
1/2 cup Bread crumbs

Instructions:

  1. Pre-heat oven to 400°F (200°C).

  2. Cook potatoes in water for 25 minutes until tender.

  3. Peel the potatoes after they are cooked.

  4. Brown the onion and garlic in olive oil, then remove to a bowl and set aside.

  5. Add a little more olive oil to the pan and sauté until lightly browned, then remove to a small bowl.

  6. In a large bowl, add potatoes, butter, Parmigiano cheese, half-and-half cream, salt, and pepper to taste.

  7. Mash the mixture lightly, then stir in the salami and half of the peas.

  8. In a buttered 8-inch square dish, press half of the potato mixture into the bottom.

  9. Top with the browned onions, remaining peas, and mozzarella slices.

  10. Spread the remaining potatoes on top and smooth with a spoon.

  11. Bake for 30 minutes until golden brown.

  12. Top with bread crumbs and bake for an additional 10 minutes until crispy.
