Potato Towers on Flatbread

Potatoes 150g
Fontina Cheese 72g
Rosemary to taste

Instructions:

  1. Prepare the Potatoes:
    Start by thoroughly washing the potatoes and peeling them with a vegetable peeler. Once peeled, slice the potatoes into thin rounds, about 3mm thick, using a mandolin for precision. If you don’t have a mandolin, you can achieve the same result with a sharp knife, ensuring the slices are as uniform and round as possible.

  2. Bake the Potato Slices:
    Place the potato slices onto a baking tray lined with parchment paper. Drizzle a little extra virgin olive oil over the slices. Preheat the oven to 250°C (or 230°C for a fan-assisted oven), and bake the potatoes for about 10 minutes, or 5-6 minutes for a fan oven, until they are golden and slightly crisped.

  3. Prepare the Fontina Cheese:
    While the potatoes are cooling slightly, thinly slice the Fontina cheese that will be used to build the potato towers.

  4. Assemble the Potato Towers:
    Begin layering the potato tower by placing a potato slice on the base. Top it with a slice of cheese, a pinch of salt, a sprinkle of pepper, and a few rosemary leaves. Add another potato slice on top and repeat the process with more cheese, seasoning, and rosemary. Continue stacking until you have a “tower” of four potato slices and three layers of cheese.

  5. Bake the Towers:
    Once all the towers are assembled, carefully place them in a non-stick baking dish. Return the dish to the oven, preheated to 250°C (or 230°C for a fan-assisted oven), and bake for about 1 minute until the Fontina cheese melts and becomes deliciously gooey.

  6. Serve:
    Gently place each potato tower on a piece of flatbread, allowing the warm, melty cheese to bring the flavors together. Serve the potato towers immediately while still warm to enjoy their crispy texture and rich taste.
