Servings: Makes 12 fritters

Ingredients:

  • 1 potato
  • 2 zucchinis
  • 1/4 onion
  • 1/4 cup yellow cornmeal
  • 2 tbsp fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp Parmigiano-Reggiano cheese
  • 3 eggs
  • 2 tbsp butter
  • 2 tbsp extra virgin olive oil

Instructions:

  1. Prepare Ingredients: Coarsely grate the potato and zucchini. You should have approximately 1 cup of grated potato and 2 cups of grated zucchini.

  2. Mix Ingredients: In a mixing bowl, combine the grated potato, grated zucchini, onion, cornmeal, parsley, salt, pepper, Parmesan cheese, and beaten eggs. Mix well to blend all the ingredients together.

  3. Heat Frying Pan: In a large frying pan, heat the butter and olive oil over medium-high heat until hot.

  4. Fry Fritters: Drop spoonfuls of the potato/zucchini mixture into the hot oil. Fry for about 2 minutes, or until golden brown on the bottom.

  5. Flip and Cook: Carefully turn the fritters over and fry for an additional 1 1/2 to 2 minutes, or until golden brown and cooked through.

  6. Repeat: Add additional butter and oil to the pan if needed for frying the remaining fritters. Continue cooking in batches until all the mixture is used.

  7. Serve: Serve the fritters with a dill dip or enjoy them just as they are.

  8. Drain Excess Liquid (Optional): If too much liquid appears in the mixture, transfer it into a sieve and let it drain before continuing to fry.

  9. Enjoy: These potato zucchini fritters are best enjoyed hot and crispy straight from the pan!

These delightful fritters are bursting with flavor and make a fantastic addition to any meal or gathering. They’re simple to prepare, budget-friendly, and guaranteed to be a hit with family and friends alike!
