Ingredients:
- 1 potato
- 2 zucchinis
- 1/4 onion
- 1/4 cup yellow cornmeal
- 2 tbsp fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp Parmigiano-Reggiano cheese
- 3 eggs
- 2 tbsp butter
- 2 tbsp extra virgin olive oil
Instructions:

Prepare Ingredients: Coarsely grate the potato and zucchini. You should have approximately 1 cup of grated potato and 2 cups of grated zucchini.

Mix Ingredients: In a mixing bowl, combine the grated potato, grated zucchini, onion, cornmeal, parsley, salt, pepper, Parmesan cheese, and beaten eggs. Mix well to blend all the ingredients together.

Heat Frying Pan: In a large frying pan, heat the butter and olive oil over medium-high heat until hot.
