Bandeng Presto with Green Chili Sauce

Ingredients

Presto Milkfish (Bandeng) 2 whole fish, cleaned
Salt To taste
Sugar To taste
Seasoning Powder ¼ tsp
Sweet Soy Sauce 1 tbsp
Water 100 ml

Sliced Spice Mix:

Spice Ingredients Quantity
Large Green Chilies 6 pieces, thinly sliced
Bird’s Eye Chilies 5 pieces, thinly sliced
Ginger 2 cm, thinly sliced
Tomato 1 large, diced
Shallots 2 bulbs, thinly sliced
Garlic 2 cloves, thinly sliced

Instructions

  1. Prepare the Milkfish: Cut the presto milkfish into portions according to your preference. Heat a pan with some oil and lightly fry the pieces until golden brown. Set aside.

  2. Sauté the Spice Mix: In the same pan, sauté the sliced green chilies, bird’s eye chilies, ginger, shallots, garlic, and diced tomato until they become fragrant and slightly softened.

  3. Add Water and Seasonings: Pour in the water, then add the salt, sugar, seasoning powder, and sweet soy sauce. Stir well to combine all the ingredients.

  4. Simmer with the Milkfish: Once the mixture comes to a boil, add the fried milkfish back into the pan. Let it simmer until the sauce thickens slightly and the fish is well coated with the seasoning, allowing the flavors to infuse into the fish.

  5. Serve: Transfer the fish to a serving dish along with the green chili sauce. Serve hot with steamed rice.
