To prepare the delicious Prosciutto e Ananas, start by selecting a ripe pineapple. You can tell it’s ripe when its skin has hints of orange and it gives off a fragrant aroma. Begin by removing the crown of the pineapple using a sharp knife. Then, trim off the base, cutting about 3–4 cm off the bottom.
Next, place the pineapple vertically on a cutting board, gripping one end firmly with one hand. Use the other hand to slice off the skin, cutting in downward strokes around the fruit. This step will also remove any dark, tough parts of the flesh.
Once the skin is removed, use the tip of your knife, a paring knife, or a vegetable peeler to remove any remaining brown eyes from the pineapple. Now, slice the pineapple in half, then cut each half into quarters.
On a serving plate, begin by placing a slice of pineapple. Next, take a slice of prosciutto, laying it partially over the pineapple slice, then folding the prosciutto over itself to create a wrap. Follow with another slice of pineapple, and repeat the process, alternating slices of prosciutto and pineapple.
