Sweet Bacon (Pancetta) 150g
Goat Cheese (Caprino) 160g

Instructions:

  1. Prepare the Puff Pastry:

    • Begin by unrolling the puff pastry sheet onto a clean surface. Use a pizza cutter or knife to slice it into 1 cm-wide strips along the longer side. You should get around 24 strips from the dough.
  2. Form the Cannoli:

    • Take a strip of puff pastry and secure one end around a metal cannoli tube (or any cylindrical object). Gently wrap the pastry around the tube, keeping it tight but not overly stretched. If the tube is long enough, you can create a second coil on the other side, making it easier to form the cannoli shape.
    • Place the wrapped tubes onto a baking sheet lined with parchment paper. Repeat until all the strips are used up.
  3. Bake the Pastry:

    • Preheat your oven to 200°C (392°F) in static mode. Once heated, place the baking sheet in the center of the oven and bake for about 15 minutes, or until the cannoli are golden brown and crispy.
    • When ready, carefully remove them from the oven. If the cannoli do not easily slide off the tubes, give them a gentle twisting motion to release them. Allow the pastry tubes to cool completely.
  4. Prepare the Bacon:

    • In a frying pan, heat a little oil and add the diced pancetta (sweet bacon). Fry until the bacon turns crispy and golden. Remove from the pan and place it onto a paper towel-lined plate to drain excess fat.
  5. Make the Filling:

    • In a mixing bowl, combine the goat cheese (caprino) with a drizzle of olive oil, fresh parsley (chopped), and a pinch of salt. To achieve a smooth and creamy texture, pour in the fresh cream, stirring until the mixture becomes spreadable but still rich and flavorful.
  6. Stuff the Cannoli:

    • Carefully fill each puff pastry tube with the goat cheese mixture, packing it in as much as possible. Don’t be afraid to generously stuff them for a creamy bite.
  7. Finish and Serve:

    • Once all cannoli are filled, sprinkle the crispy bacon bits into the open ends of the pastry tubes. Serve them fresh and enjoy these delicious, savory treats that combine the rich flavors of goat cheese, crispy bacon, and buttery puff pastry.
