Edamer Cheese | 150g |
Breadcrumbs | 3 tbsp |
Poppy Seeds | To taste |
Egg Yolks | 1 |
Whole Milk | 2 tbsp |

Extra Virgin Olive Oil | To taste |
Instructions:
-
Prepare the Radicchio:
Start by washing the radicchio thoroughly, then slice it into large pieces. Heat a generous amount of extra virgin olive oil in a skillet over medium heat. Once the oil is hot, add the radicchio and stir to coat. Cover with a lid and let it cook for about 5-7 minutes until it softens. Allow the radicchio to cool down. -
Prepare the Puff Pastry:
Unroll the puff pastry sheet onto a baking tray lined with parchment paper. Sprinkle a layer of breadcrumbs along the center of the pastry. This will help absorb any moisture from the radicchio. -
Assemble the Strudel:
Once the radicchio has cooled, evenly spread it over the breadcrumbs. Next, add the Edamer cheese, cut into thin slices, on top of the radicchio. -
Prepare the Egg Wash:
In a small bowl, beat the egg yolk together with the milk to make an egg wash. -
Shape the Strudel:
On one long side of the puff pastry, make small cuts along the edge to create a fringe effect. Brush the egg wash mixture over the exposed pastry edges. Gently fold one side of the pastry over the filling, then bring the fringing pieces across to overlap, creating a decorative effect. -
Final Touches:
Brush the entire surface of the strudel with the remaining egg wash. Sprinkle a pinch of poppy seeds over the top for added texture and flavor. -
Bake the Strudel:
Preheat the oven to 200°C (392°F) and bake the strudel in a static oven for about 30 minutes, or until the puff pastry turns golden brown and crispy. -
Serve:
Once baked, remove from the oven and let it cool slightly before slicing and serving. Your radicchio strudel is now ready to enjoy as a delightful appetizer!
