Ingredients

Caster Sugar 1 teaspoon
Chaat Masala Powder 1 teaspoon

Instructions

  1. Fry the Raw Banana
    Start by heating sunflower oil in a kadai (deep pan) over medium flame. Wash and peel the raw bananas, then grate them directly into the hot oil. Fry the banana in batches, ensuring that you peel and grate only enough bananas to fill one batch at a time to avoid them turning color before frying. Keep the heat on low to medium, and stir frequently to ensure the banana turns golden brown and crispy. Once fried, drain the grated banana on absorbent paper and set aside.

  2. Fry the Nuts
    In the same pan, add the raw peanuts, cashew nuts, and almonds. Fry them on low to medium heat until they turn a light golden brown. Once done, remove and place them on a kitchen towel to absorb any excess oil.

  3. Fry the Green Chillies and Curry Leaves
    Next, add the finely chopped green chillies and curry leaves to the oil. Fry them until they become crisp, and all the moisture has evaporated. This should take just a minute or two. Remove and drain them on the kitchen towel to get rid of the oil.

  4. Fry the Raisins
    Lastly, fry the raisins in the same oil. Be extra cautious while frying raisins as they tend to burn quickly. Fry them for just a few seconds until they puff up, then remove them from the oil and set aside.

  5. Assemble the Chivda
    In a large mixing bowl, combine the fried grated banana, peanuts, cashews, almonds, raisins, green chillies, and curry leaves. Add salt, red chilli powder, chaat masala, and caster sugar. Mix everything well to ensure the flavors are evenly distributed.

  6. Cool and Store
    Allow the chivda to cool down completely. Once cooled, store it in an airtight container to maintain its crispness.

  7. Serving Suggestion
    Serve the Raw Banana Chivda with a warm cup of Masala Chai (Indian Spiced Tea) or coffee for an authentic evening snack experience.

  • Adjust the spices: If you prefer a spicier snack, you can increase the amount of red chilli powder or add a pinch of black pepper.
