Instructions

  1. Prepare the Raw Bananas:
    Start by peeling the raw bananas and cutting them into round slices or any desired shape. Pressure cook the peeled raw bananas in water with a pinch of salt for about one whistle. Once done, remove the cooker from the heat, open it, and set the bananas aside to cool slightly.

  2. Make the Gram Flour Mixture:
    In a bowl, mix the gram flour (besan), a pinch of salt, turmeric powder, and water to make a smooth batter. The consistency of the batter should be thick enough to coat the banana slices but not runny.

  3. Coat and Fry the Banana Slices:
    Take each boiled banana slice and dip it into the gram flour mixture, ensuring it is well-coated. Heat 2 tablespoons of sunflower oil in a flat skillet or frying pan. Add the banana slices coated in the besan mixture and fry them until they turn golden brown and crispy. Once fried, drain the excess oil on paper towels and set the bananas aside.

  4. Prepare the Yogurt Gravy:
    In a heavy-bottomed pan, heat a little sunflower oil. Add the asafoetida (hing) and cumin seeds, allowing them to crackle for a few seconds. Add the turmeric powder, coriander powder, and red chili powder to the pan. Let these spices cook for 3 to 5 minutes on low heat, ensuring they do not burn.

  5. Cook the Sabzi:
    Now, add the hung curd (Greek yogurt) and lukewarm water to the pan. Stir the mixture well to combine everything, forming a smooth gravy. Carefully add the fried raw banana slices to the pan and stir to coat them with the yogurt gravy. Taste the gravy and adjust the salt as needed.

  6. Simmer and Garnish:
    Allow the mixture to simmer on low heat for 10 to 15 minutes, so the bananas absorb the flavors of the spices and yogurt gravy. Once done, turn off the heat and garnish with finely chopped green chilies and fresh coriander leaves.
