Ingredients

Ingredient Quantity
Arborio Rice 300g
Gala Apples 500g
Whole Milk 1L
Sugar 90g
Eggs 4
Lemon Zest 1
Salt 1 pinch
Peanut Oil As needed
Additional Sugar (for coating) As needed
Chestnut Honey 100g
Ground Cinnamon As needed

Instructions

  1. Prepare the Apple-Rice Mixture:
Start by washing and cutting the apples into small cubes (approximately 2 cm in size). There’s no need to peel them, as the skin adds a nice texture to the dish.
In a large saucepan with tall sides, combine the whole milk and lemon zest, bringing the mixture to a simmer over medium heat. Add a pinch of salt. Once the milk begins to warm, introduce the apple cubes and cook for about 40 minutes, stirring often to ensure the apples soften and absorb the flavors of the milk.
When the rice mixture is nearly cooked through, remove the lemon zest. Continue to cook until the rice is completely tender, then transfer the mixture to a baking dish to cool.

  2. Prepare the SautΓ©ed Apples:
While the rice is cooling, take the remaining Gala apples and slice them into thin 3-4 mm slices. Again, there’s no need to peel them.
Heat a skillet over low heat and add the sliced apples along with the chestnut honey. Allow the apples to cook slowly for about 15 minutes, stirring occasionally, until they soften and become slightly caramelized. Set aside to cool.

  3. Beat the Eggs:
Once the rice mixture has cooled, it’s time to prepare the fritter batter. In a large bowl, use an electric whisk to beat the eggs until they become light, fluffy, and airy. Gradually add one tablespoon of the cooled rice mixture at a time, folding it into the beaten eggs until the batter is smooth and well combined.

  4. Fry the Fritters:
Heat peanut oil in a deep frying pan to a temperature of about 170Β°C (340Β°F). Use two tablespoons to carefully scoop portions of the rice mixture into the hot oil. Fry 4-5 fritters at a time, turning them occasionally, until golden brown and crispy. Each fritter should take about 3-4 minutes to cook. Once golden, remove from the oil and drain on paper towels to remove excess oil.

  5. Serve:
Once all the fritters are fried and cooled slightly, serve them hot, dusted with a little sugar, and topped with the caramelized apples and chestnut honey. The fritters are best enjoyed while still warm, offering a perfect balance of sweet, tender rice and apples with the rich flavor of honey.
