Rice Balls with Salad (Polpette di Riso e Insalata)

Peanut Oil 700g
Green Beans 250g
Mixed Salad Greens 200g

Instructions:

  1. Prepare the Peas and Rice: Start by shelling 400g of fresh pea pods, which will give you around 100g of fresh peas. Bring a pot of salted water to a boil. Once boiling, add the rice and cook for about 15 minutes, ensuring the water is absorbed. Once cooked, remove from heat and stir in the peas. Allow the mixture to cool completely.

  2. Cook the Green Beans: While the rice cools, bring another pot of water to a boil. Trim the green beans by cutting off the ends, then rinse them thoroughly. Blanch the green beans in boiling water for a few minutes, then drain and set aside to cool.

  3. Prepare the Rice Mixture: Once the rice has cooled, add the egg, grated Parmigiano Reggiano, fresh thyme leaves, salt, and pepper to the rice mixture. Stir until everything is well combined. Gradually add in the breadcrumbs, mixing by hand until the mixture is firm and well-bound.

  4. Form the Rice Balls: Take portions of the rice mixture, about 30g each, and shape them into small balls. Roll each ball in the breadcrumbs until evenly coated.

  5. Fry the Rice Balls: Heat the peanut oil in a deep fryer or large pan to 170°C (340°F). Fry the rice balls in small batches (5-6 at a time) for a few minutes until golden brown. Use a slotted spoon to remove the balls from the oil and place them on paper towels to drain excess oil. Continue frying the remaining rice balls.

  6. Prepare the Salad: In a separate bowl, toss the cooled green beans with the mixed salad greens. Drizzle with olive oil and vinegar to taste.

  7. Serve: Arrange the fried rice balls on a platter and serve alongside the fresh green bean and mixed greens salad. Enjoy your flavorful and crispy rice balls with a light, refreshing salad!
