Introduction:
Roasted Chickpeas are an irresistible, crunchy, and healthy snack that can be enjoyed by both kids and adults alike. The hardest part? Trying not to munch on them as you prepare them!

Cuisine: North Indian Recipes
Course: Snack
Diet: High Protein Vegetarian

Ingredients:

Ingredient Quantity
Kabuli Chana (White Chickpeas) 1 1/2 cups, soaked in water for 7-8 hours (overnight)
Cajun spice mix 1 teaspoon
Garam masala powder 1 teaspoon
Red Chilli flakes 1 teaspoon
Dried oregano 1 teaspoon
Extra Virgin Olive Oil 2-3 tablespoons
Garlic (finely chopped or garlic paste) 1 tablespoon
Salt To taste

Preparation Time: 10 minutes

Cooking Time: 40 minutes

Total Time: 50 minutes

Instructions:

  1. Preheat the Oven:
Begin by preheating your oven to 200°C (390°F). This will ensure that the chickpeas bake evenly and turn crispy.

  2. Prepare the Baking Sheet:
Brush a non-stick baking sheet with a light coat of Extra Virgin Olive Oil. This step helps prevent the chickpeas from sticking and ensures they roast evenly.

  3. Drain and Dry the Chickpeas:
Once the chickpeas have soaked overnight, drain them thoroughly, ensuring all excess water is removed. Place the chickpeas on a kitchen towel and gently pat them dry to absorb any remaining moisture. This step is crucial for achieving the perfect crispiness during baking.

  4. Season the Chickpeas:
In a small mixing bowl, whisk together the olive oil, finely chopped garlic (or garlic paste), and salt. This mixture will coat the chickpeas and infuse them with flavor. Toss the soaked chickpeas into the mixing bowl, making sure each chickpea is evenly coated with the garlic-oil mixture.

  5. Spread Chickpeas on the Baking Sheet:
Transfer the seasoned chickpeas onto the prepared baking sheet, spreading them out in an even layer. This ensures that the chickpeas bake uniformly, giving you that perfect crunch.

  6. Bake the Chickpeas:
Bake the chickpeas in the preheated oven for about 20-25 minutes. Halfway through, stir the chickpeas with a spatula to ensure even roasting. You’ll notice them turning golden and crispy as they bake.

  7. Add the Spice Mix:
After 20-25 minutes of baking, remove the chickpeas from the oven. Immediately sprinkle them with Cajun spice mix, Garam masala powder, red chilli flakes, and dried oregano. Toss them gently to ensure an even coating of the spice mix.

  8. Finish Baking:
Return the chickpeas to the oven for an additional 10-12 minutes, allowing the spices to toast slightly and the chickpeas to become crispier.

  9. Cool and Serve:
Once done, remove the roasted chickpeas from the oven and let them cool completely on the baking sheet. The cooling process helps them firm up and develop an even more delightful crunch.

  10. Serving Suggestions:
Serve your freshly roasted chickpeas as a stand-alone snack, or elevate them by pairing them with freshly chopped onions, herbs, or even a warm cup of Masala Chai for an authentic Indian touch. You can also enjoy them with mulled apple juice for a cozy, delicious treat.

Conclusion:
Roasted Chickpeas are a fantastic high-protein, vegetarian snack that’s full of flavor and crunch. Perfect for any time of day, they can be served with various accompaniments to make your snack time even more delightful. Their unique blend of spices, combined with their satisfying texture, makes them an ideal choice for anyone craving something healthy yet indulgent. Whether enjoyed as an appetizer, side dish, or snack, these roasted chickpeas are sure to become a family favorite!
