Instructions:

To prepare this delectable roasted potato tray, begin by peeling the potatoes, then rinse them thoroughly under cold running water. Pat them dry with a clean towel to remove excess moisture. This ensures a crispier texture when they roast.

Next, melt the butter and combine it with the extra virgin olive oil in a small bowl. This mixture will serve to coat the potatoes, lending a rich and golden finish to the dish. Grease a baking dish with the butter-oil blend, ensuring the bottom and sides are well-covered for a non-stick surface.

Slice the potatoes into medium-thick rounds and arrange them vertically, placing them tightly side by side in the baking dish. The goal is to have them fit snugly, almost standing up on their edges. This method helps achieve a crisp exterior while keeping the inside soft and tender.

Peel and thinly slice the shallots, and place the slices between the potato layers, filling in the gaps. The shallots will caramelize during roasting, adding sweetness and depth of flavor to the dish.
