Rosemary New Potatoes Recipe

Instructions:

To make these delightful rosemary new potatoes, start by preheating your oven to 180°-200°C (350°-400°F). While the oven is heating, wash the new potatoes thoroughly, making sure to keep the skins on for added flavor and texture. Once they are cleaned, take a large baking tray (or two smaller ones if you prefer to serve them directly at the table) and coat the bottom with half of the olive oil.

Next, take the fresh rosemary sprigs, rinse them under cold water, and carefully strip the needles from the stems, discarding the woody parts. Set aside the rosemary needles for later use.

Peel the garlic cloves and cut each one into four pieces. This will help release more flavor as they roast with the potatoes.

Now, spread the washed and dried new potatoes evenly on the prepared trays. Sprinkle them generously with fine salt. After salting, give the potatoes a good toss to ensure they are well-coated in the seasoning. Drizzle the remaining half of the olive oil over the potatoes, followed by the rosemary needles and garlic pieces.

Place the trays in the oven and roast for about 30-40 minutes. Keep an eye on the potatoes to make sure they cook evenly. The potatoes are done when a skewer or toothpick can easily slide through without any resistance. Once they are beautifully golden and crispy on the outside, your rosemary new potatoes are ready to be served.
