I absolutely adore Brussels sprouts, especially when they’re roasted to perfection with a hint of sage. Roasting gives them a delightful crispy exterior while keeping the insides tender, creating a perfect balance of textures and flavors.

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, thinly sliced
  • 1 teaspoon ground sage
  • Salt and pepper, to taste
  • Fresh lemon juice (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).

  2. Prepare Brussels Sprouts: In a large bowl, toss Brussels sprouts with half of the olive oil, ground sage, salt, and pepper until evenly coated.

  3. Roast Brussels Sprouts: Spread the Brussels sprouts in a single layer on a baking dish coated with cooking spray. Roast in the preheated oven for 20-25 minutes, or until the sprouts are crispy on the outside and tender on the inside.

  4. Brown Garlic: While the sprouts are roasting, heat the remaining olive oil in a skillet over medium heat. Add the sliced garlic and cook for 3-4 minutes, stirring frequently, until golden brown and fragrant.

  5. Combine: Remove the skillet from heat. If using, stir in fresh lemon juice to the garlic oil.

  6. Finish: Once the Brussels sprouts are done roasting, add them to the skillet with the garlic oil. Toss gently to combine, ensuring the sprouts are coated with the flavorful garlic oil.

  7. Serve: Transfer the roasted Brussels sprouts with browned garlic to a serving dish. Season with additional salt and pepper if needed. Serve hot and enjoy!
