Instructions

Begin by cooking the basmati rice in boiling water for about 10 minutes. Once ready, drain the rice and set it aside in a bowl.

While the rice cooks, prepare the crispy bread. Take the multigrain bread and cut it into 1 cm cubes.

Place the bread cubes on a baking sheet lined with parchment paper, drizzle with 10g of olive oil, and toss gently to coat. Bake in a preheated oven at 180°C (350°F) for about 10-12 minutes, or until golden brown and crispy. Remove from the oven and allow them to cool slightly.

In a skillet, heat the remaining 10g of olive oil over medium heat. Add the salmon and cook for approximately 6 minutes, turning the salmon gently to ensure it’s evenly cooked and lightly browned on all sides. Remove from the pan and set aside.

Next, halve the avocado, remove the pit, and carefully peel off the skin. Cut the avocado into thin slices, then cut them into strips, and finally dice them into small cubes.

To assemble the bowls, place a portion of cooked rice in each bowl. Add a generous serving of avocado cubes beside the rice, followed by the cooked salmon.

Finish the dish by topping the bowls with the crispy bread cubes, a sprinkle of poppy seeds, and a few fresh thyme leaves.

Season with a drizzle of extra virgin olive oil, a squeeze of lemon juice, a pinch of fine salt, and black pepper to taste.
