Prepare the Salmon:
Begin by skinning and deboning the salmon fillet. Slice the salmon into strips about 1 cm wide, then cut them into small cubes. You want the pieces to be small enough to easily form into patties but large enough to retain the texture of the fish. -
Chop the Aromatics:
Finely chop the two fresh spring onions, the fresh dill, and half of a fresh chili pepper. Be sure to remove the seeds from the chili before chopping it to control the heat level. -
Combine the Ingredients:
In a large mixing bowl, combine the cubed salmon with the chopped spring onions, dill, and chili. Crack one egg into the bowl and add the breadcrumbs. The breadcrumbs will help bind the mixture together and give the patties structure. Season with salt and black pepper to taste. -
Form the Patties:
Mix the ingredients thoroughly, ensuring everything is well combined. Once the mixture is uniform, divide it into four equal portions. Wet your hands with a little water (or use a patty press if you have one) and shape the mixture into four firm, even-sized patties. -
Cook the Salmon Burgers:
Heat a non-stick frying pan over medium heat and lightly coat the base with extra virgin olive oil. Once the pan is hot, carefully place the patties in the pan. Cook the burgers for about 2 minutes on each side, flipping them halfway through the cooking time to ensure they are cooked evenly and golden brown on both sides. -

Once cooked, serve the salmon burgers hot. They can be enjoyed in several ways: with a dollop of creamy mayonnaise and a fresh green salad on the side, or nestled inside a bun for a classic burger experience.
Tips:
For a richer flavor, you can add a tablespoon of mustard to the mixture along with the breadcrumbs for a tangy kick. For a spicier burger, increase the amount of chili pepper or add a dash of chili flakes.
